JANUARY
January makes it difficult for us to rely exclusively on regional and seasonal produce. Those who prefer to avoid imported fruits and vegetables can enjoy a variety of stored goods, frozen foods, dried fruits, and dried herbs.
Apple – Topaz
Simply delicious!
Topaz is a popular and widespread apple variety in Austria. The color of the apple resembles the gemstone topaz, hence the slightly modified name. This medium-sized apple impresses with its firmness and sweet-sour aroma. It is harvested from October onwards and can be stored and enjoyed until July.
Red Onions
Purple Wonder
Not only is it a little prettier than the classic onion, the red onion also contains twice as many beneficial active ingredients. Whether you steam, bake, grill, or fry it, the important nutrients are still present. It also tastes significantly sweeter and milder than its lighter-colored relatives. The red tubers can be harvested between June and October and stored until the next season.
Pears
Now's the time to grab them!
Pears can be harvested locally from the end of August until November. Their low acidity and mild sweetness make them a popular summer fruit. This stone fruit is also particularly popular as a puree with meat dishes or made into a refreshing compote.
Black Radish
The Soul Food for Winter
The black winter radish is an essential side dish in Japanese cuisine, but also has many loyal fans in Austria. Black radish is usually harvested between August and October and provides important nutrients for the cold season. Scratchy throat or cough?
The radish can be made into a completely natural cough syrup with a little honey – a popular home remedy for colds.
Beets
The Power Tuber
A true vitamin bomb, with its content of important nutrients, beets surpass anything else we can find in our refrigerators. They are sown in April and harvested from early October until the first frost. This makes the red tuber a classic winter vegetable. The earthy flavor is especially popular in salads or carpaccio.
Sauerkraut
Typically German
Even ancient sailors protected themselves from nutritional deficiencies by regularly consuming sauerkraut, as this classic side dish is rich in fiber and vitamin C. Sauerkraut is made from white cabbage. This is usually harvested between September and November, so it can be prepared fresh as late as December. Perfect for the Christmas season!
